American Cheese Society

American Cheese Society

The American Cheese Society is considered by many to be the “Academy Awards” of the cheese industry. The American Cheese Society (ACS) awards are a prestigious and notable benchmark for cheese makers throughout the country. The cheeses are blind judged by a prestigious group of highly trained and respected cheese judges. Every attempt is made to present the cheese with no discernible distinction so that each cheese is judged fairly. Founded in 1983 to support the artisan and specialty cheese industry, the ACS is a non-profit organization that promotes product education, development and opportunities to manufacturers, suppliers and distributors within the cheese industry. Over the last 29 years, the ACS has introduced, and subsequently raised the standard and quality of cheeses distributed throughout North America. True cheese gourmands follow the ACS competition and even attend the open event at the end of the judging to have the chance to sample each year’s winners from every category.

2011

Mariposa Dairy Ltd. – Lindsay (Kawartha Lakes County) ‘Leaders in Innovation’ Premier’s Award Winner Separating curds and whey used to be a tough job at Mariposa Dairy Ltd., a producer of soft goat cheese. Workers had to hang bags on a stainless steel tree and flip them every few hours for proper drainage. The whole process was time-consuming and physically challenging until a new innovation was introduced. The dairy worked with community partners to design the “MegaPress,” a machine that separates curds and whey so quickly and efficiently that it has reduced the separation time cycle from four days to 24 hours. That makes it a lot easier to produce nearly 18,000 litres of cheese each day to meet market demand. The energy-saving press can also be preset for different moisture content levels, helping the dairy create new varieties to add to their line of award-winning cheeses. The MegaPress has increased production and created new jobs, and is helping introduce Ontario goat cheese into the global market.
